Jamaican Oxtail

Here is a classic recipe for Jamaican oxtail that you can try at home. This recipe serves 4-6 people:

Ingredients:
- 2 lbs oxtail, chopped into pieces
- 2 tbsp vegetable oil
- 2 onions, diced
- 4 cloves garlic, minced
- 2 bell peppers, diced
- 2 carrots, chopped
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 tbsp tomato paste
- 2 tsp allspice
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 scotch bonnet pepper (optional)
- 2 tbsp chopped fresh parsley

Instructions:
1. Heat the oil in a large pot over medium-high heat. Add the oxtail and brown on all sides.
2. Remove the oxtail from the pot and set aside. Add the onions, garlic, bell peppers, and carrots to the pot and cook until softened.
3. Return the oxtail to the pot and add the beef broth, diced tomatoes, tomato paste, allspice, thyme, salt, black pepper, and scotch bonnet pepper (if using).
4. Bring the mixture to a simmer and cover the pot. Cook for 2-3 hours, stirring occasionally, until the oxtail is tender.
5. Remove the scotch bonnet pepper (if using) and sprinkle with chopped parsley before serving.
