Ingredients:
- 1 kg chicken, cut into pieces
- 2 onions, chopped

- 2 tbsp brown sugar
- 2 tbsp soy sauce

Instructions:
1. Season the chicken with salt and pepper.
2. Heat the oil in a large pot over medium-high heat.
3. Brown the chicken on all sides and remove from pot.
4. Add the onions, garlic, and bell pepper to the pot and sauté until softened.
5. Add the tomatoes and scotch bonnet pepper (if using) and cook for a few minutes.
6. Add the brown sugar, soy sauce, Worcestershire sauce, and enough water to cover the chicken.
7. Return the chicken to the pot and stir to combine.
8. Bring to a boil and then reduce heat to low.
9. Cover and simmer for about 30 minutes or until the chicken is cooked through and tender.
